Lime Cilantro Shrimp Cake

  • 2 T Salt
  • 1 Lime
  • ⅔ cup Extra heavy mayo
  • 2 t Blackening seasoning
  • 2 t Whole thyme
  • ⅓ bunch Cilantro, chopped
  • 2 cup Soft bread crumbs
  • 1 lb Shrimp, peeled, deveined and roughly chopped
  • Salt and pepper to taste
  • 4 cup Panko for breading
  • ½ cup Butter-flavored oil for cooking

To prepare:
1. In a mixing bowl, zest the lime and then juice it. 
2. Add mayo, blackening seasoning, thyme, cilantro, bread crumbs and shrimp. Mix by hand. 
3. Shape the mix in silver dollar size discs and bread with the panko bread crumbs. 
4. Pan fry the discs in a nonstick skillet over medium heat until golden brown on both sides.
